Ingredients
Dressing
- 2 generous tablespoons prepared hummus
- 1 tablespoon red wine vinegar
- 1 1/2 teaspoons lemon juice
- 1/4 teaspoon sugar
- 1/8 teaspoon salt
- Fresh ground pepper to taste
- Optional: 1/4 teaspoon dry oregano
Salad
- 7 ounces ready-to-eat romaine lettuce
- 1/2 cup ready-to-eat cabbage slaw
- 12-16 grape tomatoes
- 2 -3 tablespoons marinated olives such as Kalamata, Spanish green or a combination
- 1 1/2 ounces feta cheese, crumbled
- Optional: A handful of pita chips, crumbled
- 1/2 pound cooked shrimp such as poached or grilled prawns
Directions
Scoop the hummus into a large salad bowl. Add the remaining dressing ingredients and whisk together until emulsified. Transfer the lettuce to the bowl along with the cabbage slaw and toss with the dressing. Arrange the remaining ingredients on top of the salad. Serve, and enjoy!
