Arugula, Frisée & Apples with Lemon Pear Vinaigrette

Ingredients
Salad
- 5-6 ounces arugula, washed and spun dry
- 5-6 ounces frisée lettuce, washed and spun dry
- 1 sweet, crisp apple, such as a braeburn or pink lady variety, or crisp pear such as bosc
- 1/4 – 1/2 small red onion
- 1/3 cup walnuts
- Optional: 1 carrot, cut into matchstick pieces
- Optional: 1/3 – 1/2 cup crumbled goat cheese or blue cheese
- Salt & fresh ground pepper to taste
Dressing
- 1/3 cup pear juice
- 1/4 cup extra virgin olive oil
- 2 1/2 tablespoons fresh squeezed lemon juice
- 1/4 teaspoon agave syrup
- 1/2 – 1 teaspoon fresh minced garlic
- Pinch of salt & fresh ground pepper to taste
Directions
Prepare salad ingredients: Toast the walnuts until they begin to brown and emit a nice fragrance. Allow to cool. Arrange the arugula and frisée in a salad bowl. Slice the apple and red onion thin and add to the bowl with the lettuces.
Make the vinaigrette dressing: Mix the vinaigrette ingredients together in a jar or bowl, combining well. Taste test the dressing, (for tips on taste-testing, click here) and adjust seasonings accordingly.
Assemble the salad: Toss the salad with a light coating of the dressing. Garnish with the walnuts, slivered carrots and crumbled cheese (optional). Add salt and pepper to taste; serve and enjoy.
