Bittersweet Salad With Honey-Glazed Goat Cheese Dressing

Ingredients
Salad
- 8 ounces radicchio
- 1 red apple
- 1 tablespoon extra virgin olive oil
- 3 tablespoons golden raisins
- 1/4 cup parsley leaves, roughly chopped
- 3 tablespoons chopped walnuts, toasted
- Salt and freshly cracked pepper to taste
Dressing
- 1 ounce goat cheese
- 2 tablespoons walnut oil
- 3 tablespoons fresh lemon juice
- 1 scant tablespoon honey
- 1/8 teaspoon salt plus fresh ground pepper to taste
Directions
Make the dressing: In a blender, combine the dressing ingredients until smooth and emulsified. If the dressing is too thick to pour, thin with an additional half teaspoon of walnut oil and an additional teaspoon of lemon juice. Set the dressing aside.
Prepare the salad ingredients: Slice the radicchio into wedges about two to three inches wide. Coat the bottom of a medium sautée pan or skillet with half the olive oil and place over high heat. Transfer the radicchio to the pan, cut sides down, add a light sprinkle of salt and pepper, and sear until well browned, about three minutes on each side. Transfer to a serving platter. Add the apples to the pan and sear until light brown on both sides, about three to five minutes. Arrange the apples on top of the radicchio.
Assemble the salad: Drizzle a generous amount of dressing over the salad. Garnish with the raisins, walnuts and parsley. Grind on additional pepper to taste, if desired. Serve, and enjoy!
