Three reasons I love fall: 1.) It’s not cold, but it’s cold enough for light jackets and ankle boots; 2.) Kids are back in school (my kids are grown, but the emotion somehow sticks); 3.) Fall food makes me want to stop what I’m doing and just eat. Like this scrumptious salad that exudes warm colors and flavors. Double the dressing and use the extra on kale topped with roast chicken.

I had been eyeing the tricolor carrots at my grocery store for months, wondering if their distinct appearance was worth the extra price, and curious about their flavor. Finally, with the fantasy of a beet salad floating around in the back of my brain, I threw them into the cart. I’m glad I did! The carrot’s showy jewel tones are only a hint of the sweet, earthy flavors that burst in your mouth with every bite.
