The beauty of seitan (pronounced SAY-tan), a popular meat alternative, is twofold: First, it’s super high in protein – about 20 grams per serving. Second, its bland flavor and spongy texture make it the perfect candidate for a marinade. To keep things simple, the marinade in this recipe also serves as the salad dressing. It has a luscious aroma and tart, spicy finish.
