Mixed Lettuces with Hazelnuts, Oranges, & Classic Blue Cheese Dressing
The perfect fix for a blue cheese craving. An elegant starter, or plunk slices of grilled steak on top and make it the main course.

Salad
- 12 ounces mixed lettuces such as Boston, green leaf, curly endive and frisée
- 2 oranges
- 3-4 tablespoons blanched and skinned hazelnuts
Dressing
- 3 ounces blue cheese such as Maytag, Danish Blue or Bleu d’Auvergne
- 3 tablespoons sour cream or crème fraîche
- 2 medium cloves garlic, minced
- 2 tablespoons mayonnaise
- 3 tablespoons olive oil
- 1 tablespoon white wine vinegar
- 2 teaspoons Dijon mustard
- Salt & freshly ground pepper to taste
Directions
Make the dressing: Mix all of the ingredients together in a blender until smooth. Thin with a teaspoon of water or so, to desired consistency. Adjust seasonings to taste. Makes about ⅔ cup dressing. The dressing keeps, covered and refrigerated, about 1 week.
Make the salad: Roughly chop the hazelnuts and toss in a non-stick skillet on medium heat until lightly browned. Allow to cool. Wash and spin dry the lettuce. Slice oranges into ½ – 1 inch pieces. Assemble the salad ingredients in a serving bowl, reserving about ⅓ of the hazelnuts and orange pieces for garnish. Toss the salad with a light coating of the dressing. Adjust seasonings to taste. Plate the salad, garnish with reserved nuts and orange pieces and serve.
