Thankfully, oranges and other citrus ships well.  So, if you live in North America, you can find great varieties this time of year.  This refreshing approach works well with any variety of orange, tangerine, clementine or grapefruit.

Oranges With Fresh Herbs & Pea Shoots

Ingredients

Salad

  • 4 ripe oranges
  • 2 tablespoons fresh herbs such as marjoram, basil or parsley, chopped
  • 1/4 small – medium red onion, sliced very thin
  • 3 cups pea shoots, washed and spun dry
  • 1 1/2 tablespoons balsamic vinegar
  • Course salt and fresh ground pepper to taste

    Directions

    Prepare salad ingredients: Divide the oranges into eight sections. Slice the fruit from the peel, and cut sections into 2 or 3 pieces (see photos). Transfer the orange pieces to a bowl. Add the fresh herbs, red onion, balsamic vinegar, and toss well. Season with the course salt and pepper. Taste and adjust seasonings.

    Line a salad spinner with paper towels. Rinse the pea shoots well under cold water, transfer to the salad spinner and spin until dry.  Note: The paper towels will prevent the shoots from becoming permanent residents of your salad spinner:)

    Assemble the salad: Divide the pea shoots between 4 plates. Arrange the other salad ingredients on top. Garnish with extra herbs and red onion, if desired. Serve and enjoy!
