Strawberries With Radishes & Fresh Mint

This simple salad of strawberries with radishes & fresh mint is refreshing and pretty.  While the addition of sugar or agave syrup is optional, the added sweetener boosts the flavor of the berries. Crumble on some gorgonzola cheese for a rich, savory experience.

Ingredients

Salad

  • 16 ounces fresh strawberries*
  • 3 mild radishes
  • 3-4 fresh mint leaves, rinsed and patted dry
  •  3 tablespoons orange juice
  •  2 tablespoons balsamic vinegar
  •  Optional: 1/4 -1/2 teaspoon sugar or a drop of agave syrup

*If your strawberries are not fully ripe, leave them out at room temperature for a couple of hours before rinsing.

Directions

Rinse and hull the strawberries, removing the leaves and inner stems (see photo).  Pat dry.  Rinse the radishes, slice off the ends, and slice thin.  Tear the mint leaves into small pieces.

Measure the orange juice and vinegar into a serving bowl.  Add the mint and whisk together well.  Add the strawberries and radishes to the bowl and toss gently.  Allow the berries and radishes to macerate in the vinegar/orange juice/mint combination for a few minutes.  Drain off any extra liquid.  Spoon the salad into bowls, adding fresh mint leaves as a garnish, if desired.

Serve, and enjoy!
