Any good quality tomato salsa will work in this salad dressing, so let your taste buds be the guide. Mild, medium or burn-the-house-down hot…the spicier you go, the more it will offset the sweetness of the melon.
Watermelon Basil Salad – Burrata Salsa Dressing

- 12 ounces watermelon
- 1-2 sprigs fresh basil, about 1/4 cup chopped, loosely packed
- Salt & fresh ground pepper to taste
Burrata Salsa Dressing
- 4 ounces Burrata or fresh mozzarella cheese
- 3 tablespoons tomato salsa
Prepare salad ingredients: Cut the watermelon into large bite size pieces and transfer to a serving bowl. Tear or chop the basil into small pieces and set aside.
Make the dressing: Drain the water from the cheese, transfer to a small bowl, and add the salsa. Fold together the ingredients, gently breaking up the cheese.
Assemble the salad: Pour the dressing over the watermelon and toss gently. Add the basil, a sprinkle of salt and a few grinds of fresh pepper. Toss again, serve, and enjoy!
