Quick Flavored Olive Oil

- 1 cup lightly packed fresh herbs such as basil, oregano, marjoram, or rosemary
- 2/3 – 1 cup extra virgin olive oil
Place herbs in a clean, dry jar. Pour the olive oil over the herbs (the less oil used, the stronger your olive oil flavor will be). Cover the jar and allow to sit at room temperature for 2 – 3 hours, then refrigerate. The oil will congeal in the fridge but will liquify within a few minutes at room temperature. To liquify immediately, run the jar under hot water. Flavored olive oil will stay fresh for 2 -3 weeks in the fridge. Enjoy with bread or whisk into salad dressing!
